Two of my favorite things are hosting and baking, so whenever I get the chance to combine the two, it truly transports me to my happy place. This week we hosted a pre-Halloween cookie decorating party with Liam and a few of his friends. The cookies were tasty, the laughters were loud, and the mess was actually very minimal!
You don’t have to be a pastry chef or culinary artist to create really cute and scary Monster Cookies. All you need are some fun colors and an assortment of candy eye balls. I wanted the kids to be able to choose their own color, but since we were decorating with a group of children ages 4-8, I didn’t think liquid food coloring/food dye was the best choice. So instead we used Cotton Candy Express® sugars. It was so easy for each kid to spread a bit of butter cream icing and then sprinkle on the colorful sugar of their choice. The end result is a cookie that doesn’t taste artificial or overwhelming like you may get from your typical store bought sprinkled cookie. Instead they were the perfect amount of sugar and tasted so light and decadent.
the Ingredient List
- 4 cups of sifted all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1.5 sticks softened butter
- 1.5 cups sugar
- 2 large eggs
- 1.5 tsp vanilla extract
- butter cream icing (store bought works just fine)
- Cotton Candy Express Sugars®
- assortment of candy eye balls
- optional: decorative gel icing
the Recipe
- Preheat oven to 350 degrees.
- Mix 4 cups flour, 2 tsp baking powder, and 1 tsp salt.
- In a second bowl, add 1.5 sticks of softened butter and 1/4 cup of sugar. Beat until fluffy.
- Add 2 eggs and 1.5 tsp vanilla. Continue to beat well.
- Slowly stir in the dry ingredients from step 2 until you get a smooth and stiff dough.
- Lightly dust your counter top with powder sugar and roll out the dough.
- Cut into 1/4 inch thick circle cookies. (tip: I use the rim of a drinking glass)
- Bake for 12 minutes until firm and just lightly golden brown. Remove cookies and cool completely.
- Once cooled, set cookies out for decorating.
- Add your buttercream icing, then sprinkle the Cotton Candy Express® Sugars, flipping over the cookie to shake off any excess sugar.
- Decorate with candy eyes and gel icing.
We went with the purple (grape), green (green apple), and orange (oranges) Cotton Candy Express Sugars and the colors all turned out so bright and vibrant.
